Making a tamale is no easy task. It takes roughly four hours, exactly the right ingredients and hard-to-find equipment to do it. That’s why I left it up to El Pinto Restaurant in Albuquerque, New Mexico to do the cooking for me. Here now is a behind-the-scenes look at how they put together tamales to fill 2,700 plates a night.
