Leftover candies from Halloween (Hershey’s Kisses to be precise) and a soft, mushy, way-past-its-prime banana made their way into today’s breakfast. It was fabulous. And since I used pancake mix, it wasn’t much of a time-sucker either.
If you are thinking of making banana pancakes with Kisses (of course, plain old chocolate chips work fine too), here’s what you need to know. First, chop the tiny droplets of chocolate into small pieces. Uniformity is over-rated when it comes to something as divine as chocolate, so some of the pieces may be chunky while others shall resemble shavings. Either way, you are good to go. Blend the banana into the pancake batter, add a knob of butter to the pan, let it melt, ladle the mixture on to the pan, turn the heat to medium-low and wait. This is the part which requires patience, oodles of it. So wait till tiny bubbles form on top of the pancake and then flip it. Once it looks like it’s almost done, sprinkle the chopped chocolate on top and watch the bits melt into the nooks and crannies of the pancake. Serve warm with a generous drizzle of maple syrup and maybe a couple of rashers of streaky bacon.
I find it to be an excellent go-to meal on various occasions – too many ripe bananas crowding the counter top, craving for chocolate at breakfast, and most importantly, when battling a hangover.
